Freeze-drying is a particularly gentle preservation process. The food is deep-frozen directly after harvesting and then placed in a vacuum container. A strong negative pressure is created in this until the water escapes from the food as water vapor within several hours. Freeze-dried products are therefore the concentrated form of the food. Due to this process, their ingredients remain almost unchanged and their color, aroma and taste are particularly intense.
