Polenta – simple food with a great potential

While our office indulges in Italian summer night dreams with steaming polenta, we remember that this dish, consisting mostly of cornmeal, has always been considered a poor's meal, all the way from Spain to southern Russia. In the past, one-sided polenta-based diets often caused vitamin deficiencies. However, when properly prepared, high-fibre cornmeal is anything but nutrient-poor; moreover, the grits of which our organic polenta is made of are processed with valuable sprouts – usually removed and turned instead into high-quality oil.

Polenta – what is it?

By definition, polenta is a solid porridge made from cooked cornmeal. Like corn flour, cornmeal consists of maize kernel endosperm, but unlike flour, semolina is ground somewhat coarser. Especially in northern Italy, Provence and Spain, polenta – or synonymously maize semolina – is part of the regional cooking tradition. However, it is a popular dish across all national borders. Polenta is often discredited for tasting dry and bland. However, with selected herbs such as rosemary and thyme, and optionally with cheese and fine oils, the hearty semolina porridge becomes a creamy and aromatic taste experience.

Polenta – more than a side dish

Like mashed potatoes, polenta is often served as a side dish with meat, fish or vegetables. But polenta slices baked in the pan until golden brown or roast patties also make a wholesome lunch with a green salad. Our organic polenta cornmeal is best stored in a cool and dry place. For airtight storage, our stylish storage jars are suitable. If the cornmeal has already been processed into polenta, you should store the leftovers in the refrigerator and eat them as soon as possible. Alternatively, you can also freeze finished polenta. To do this, freeze polenta individually in slices and fry until golden brown after thawing.
The preparation of polenta from corn semolina is very simple: stir 1 part corn semolina into about 4 parts boiling water. Simmer over low heat for 5-10 minutes, stirring, depending on the desired consistency. Add liquid as needed. Remove the pot from the heat and let the golden polenta stand for another 5 minutes. Polenta can be refined with salt, oil or butter and herbs such as rosemary, thyme or nutmeg. Polenta also becomes a bit spicier if you use vegetable broth instead of water. On the other hand, it tastes mild and creamy if you prepare polenta with milk or a vegetable drink (here, too, the ratio is 1:4). A good family size is 250 grams of uncooked cornmeal to about 1 liter of liquid. Polenta, however, is very filling. As a rule, about 80 grams per person are sufficient as a main course and about 50 grams of uncooked cornmeal as a side dish.
Corn is a gluten-free cereal. Our corn semolina consists of 100% ground corn and therefore only gluten-free ingredients. However, gluten-containing grains are also processed in our producer's mills. Despite thorough cleaning and sealed storage, contamination can never be 100% ruled out in a plant where both gluten-free and gluten-containing production takes place. For this reason, we do not label our corn semolina as "gluten-free" and voluntarily point out that traces of gluten may be contained in our product.
Unlike many producers, we process the corn kernel including its valuable germ for our organic polenta corn semolina. In most cases, the germ is removed before processing and instead pressed into high-quality oil. Our corn also comes from 100% controlled organic cultivation. Without colorants, flavorings and preservatives, the carefully processed corn semolina ends up in the airtight packaging and is ready to be processed by you into delicious polenta. Fine and easy product

I mix this into my oat flakes in the morning, then cook it in the microwave for a bit and I have a delicious breakfast. But this polenta is also suitable for cooking savory with pasta sauce. It can also be cooled after cooking, then cut into "fries" and bake in the airfryer. In short, a versatile product of good quality.
