Vegan pancakes with almond flour and protein powder

Fancy a pancake? Then vegan pancakes with a light nutty note (thanks to the addition of almond flour) are just the thing. The combination of the nutty-sweet flour, banana, protein powder and crunchy Coquitos not only tastes great, but is also extremely filling. We hope you enjoy the recipe and bon appΓ©tit!

0.5 cups Spelt flour
0.5 cups Almond flour
2 Units bananas
1 Tsp. Baking powder
2 Tsp. Vegan protein powder (e.g. hemp or rice protein)
0.75 cups Mandel Drink
2 tbsp. Sweetener (optionally maple syrup or coconut blossom sugar)
2 Tsp. Mandelmus
5 Units Coquitos
0 to taste Coconut oil for frying

    First mix the spelt flour, almond flour, baking powder and protein powder together in a bowl.

  • Step 2/9

    Then peel one of the two bananas and mash it with a fork.

  • Step 3/9

    Now add the maple syrup to the banana and mix together with the dry ingredients.

    Then stir in the almond drink and mix the batter until there are no more lumps.

    Then heat a non-stick frying pan with a little coconut oil on a high heat.

    Before frying the vegan pancakes, you should set the oven to a medium heat. You can keep the finished pancakes warm in the oven.

    Pour about 2 tablespoons of batter into the pan for each pancake.

    If small bubbles form, you should turn the pancake over.

  • Step 9/9

    You can then peel and thinly slice the second banana and spread it on the pancakes together with the almond butter and coquitos.
