Letting buckwheat seeds germinate first and then drying and eating them sounds like a terrible crime. We do this to our organic buckwheat seeds because it gives them a distinctive crunchy texture and nutty flavour that together enrich muesli, breads and even salads.

Buckwheat: a beloved pseudo-cereal

Buckwheat belongs to the group of pseudocereals. These are used like real grains, but botanically belong to other plant families. One of their characteristics is that, unlike most grains, they are naturally gluten-free! You don't have to worry about cross-contamination either, as no gluten-containing foods are processed near our sprouted buckwheat.

How to use our sprouted organic buckwheat

You can eat KoRo's germinated buckwheat straight from the package, sprinkling it over your porridge or smoothie bowl. But it can also be ground with a high-power blender to make your own sprouted buckwheat flour which can be used for baking bread, cakes, and delicious and high-fibre pancakes.

The ripe organic buckwheat seeds are left to swell in water several times. In the process, they absorb many times their size in water. The water gives the buckwheat seed the go-ahead to germinate - a small sprout is formed from which the buckwheat plant would later grow. The germinated organic buckwheat is then gently dried so that all nutrients are preserved.

You can nibble the sprouted buckwheat directly as it arrives at your place. You do not have to cook it. Sprouted buckwheat is perfect as an ingredient for your muesli, porridge, as a topping for other hearty dishes like salads, or as a secret ingredient in bread.
On the one hand, the germination process breaks down inhibitors that are supposed to protect the seed from predators (i.e. us). At the same time, substances such as chlorophyll are formed in the tiny shoot and the content of protein and fiber changes. This changes the nutritional values and the bioavailability of nutrients increases due to germination.
