Cut the zucchinis into thin strips, preferably with a peeler. Then fry in a little olive oil in a pan until golden brown.

Heat the cream cheese together with the pesto in a pan, add the lemon zest and juice and about a ladle of pasta water. Simmer briefly and stir in the pasta.

Top with vegan parmesan, zucchini and more pesto.
